SAGE ALLEY BREWERY & GRILLE
FOUNDERS

The origin of Sage Alley started 8 years in ago when on a trip to Germany we came upon a German couple who took us to a brewhouse in the small town of Tegernsee. Our first experience of small-town charm and fellowship swelled in the immense but hidden hall where friends and family gather to share the days and weeks events over a beer.

Inspired by this trip we returned home with the discussion of one day duplicating the beer house atmosphere in our hometown. Having been a longtime business owner’s in the town of Coopersburg, we purchased 1894 Victorian and began the restoration of this old town charm home into a vibrant brewery for the town residents and communities to enjoy.

Today, Sage Alley will open with our microbrews and chef-inspired food trailer “The Grille at Sage Alley”, truly a dining experience in the food truck industry.

This brewery will need to be a stop on your ale trail  – one to not miss, and the atmosphere will draw you to return. Stop in, bring your friends, converse with your family – put the phone down and enjoy what life has given you and us…Each Other!

SAGE ALLEY BREWERY & GRILLE
CHEF

Our chef, Scott Wilbur, has over 30 years of experience in the food industry, cooking with such notable chefs as Chef Tell. He has assisted with many foods shows to include QVC, The TV Food Network, WFMZ and Live with Regis and Kathy Lee.  It is Scott’s conviction that all food he prepares must be fresh, locally sourced and made from scratch.  He strives for the perfectly paired flavors in every bite that won him many rave press reviews from The Trenton TImes to the Philadelphia Inquirer.  His experience was shared over the years with The Harrow Inn, The Washington House, and The Springtown Inn.

Sage Alley welcomes Chef Scott to the Sage Alley Grille.  You can be assured he will create a fresh, flavorful and diverse menu that you can feed your entire family.

BREWMASTER

Michael Wieboldt is the Head Brewer at Sage Alley Brewing.  He began his career in 2011 at Fegley’s Brew Works under well-known Lehigh Valley Brewmaster Beau Baden.  Michael graduated from American Brewer’s Guild with a degree in Intensive Brewing Science and Engineering in 2013 while working full-time under the mentorship of Baden.  At the start of his career in 2011 he was making boxes for bottling runs, then quickly worked his way up to Lead Brewer in 2014, and by April of 2016 became Head Brewer for two brewpub award-winning locations and in charge of production for outside distribution.

Michael’s passion for brewing began at 18 in his home state of New Jersey.  He and his father enjoyed this new hobby together, brewing every weekend.  Michael knew he had found his career.

Michael, an Allentown resident, and dog lover enjoys traveling with his wife and sampling new and local beers while networking with other brewers.
